Healthy Vegetables Saute / Stir fried vegetables

Healthy eating is always a popular resolution and it is on my list always. I am trying to include more vegetables into my diet and into our family meals. I love making stir fry because it is easy, healthy, and a great way to sneak a variety of vegetables into one meal!

This is my husband’s all-time favorite dish. My daughters like eating soya chunks and so I add them to the veggies.And this time I am very happy because I used broccoli grown in my kitchen garden for this recipe…My first ever grown broccoli patch..fresh and fully organic.

Prep Time 10 minutes
Cook Time 10 minutes

INGREDIENTS:

1/2 cup broccoli florets
1/2 Bell Pepper Yellow
1/2 Red Bell Pepper
5-6 cherry tomatoes
1onion
2 Oregano tablespoon Fresh
1/3 tablespoon olive oil
to taste Salt

INSTRUCTIONS:

  1. first, break the broccoli into florets or you can chop them.
  2. heat enough water with 1/4 tsp salt in a pot. let the water vigorously boil.
    switch off the flame and add the broccoli florets.
  3. wait for about 15-20 seconds and then drain the florets. reserve a few broccoli florets for garnish.
  4. the above blanching method is to get rid of the insects in the broccoli.
  5. Cut other Vegetables in identical sizes.
  6. In a pan heat oil and add oregano and Onions. Stir and add bell peppers. Stir for 2-3 minutes and then add Broccoli.picsart_1488296141400
  7. lastly, add tomatoes and Stir the vegetables at high flame.
  8. Stir for another two-three minutes. Add salt, paper, and stir. Serve Hot

NOTES:

  • You can add any vegetables of your choice like the mushroom, beans, red cabbage etc.
  • You can add paneer, soya chunks,. chickpeas too.
  • You can add tomato and chili sauce as per your taste.

HARA BHARA KABAB / VEG KABAB RECIPE WITH STEP BY STEP PICTURES

Hara bhara is one of my favorite dishes. I had been looking up to try this recipe from a lot many days but always wondered how to get the green color. I searched on the net and I found that if we add green veggies it would give a natural green color.refered to the recipe of Hara bhara kabab in few books and sites and came up with this method.

Hara bhara kebab gets its name by the healthy green spinach used in this recipe. With spinach, any green vegetables can also be added in this recipe including potato and paneer. It is great evening snack recipe and also can be an evergreen party starter and also good for kids who hate green vegetables.

INGREDIENTS:

1 bunch palak leaves/spinach
2 tsp oil
1 green chili / Hari Mirch, finely chopped
1 capsicum, finely chopped
¾ cup beans, chopped
¾ cup peas, fresh / frozen
2 potato, boiled and grated
¾ cup paneer/cottage cheese, crumbled
3 tbsp coriander leaves, finely chopped
1 tbsp corn flour
2 tbsp suji /rava
1tbsp peanuts crushed
½ tsp Kashmiri chili powder / Lal Mirch powder
½ tsp coriander powder/dhania powder
1 tsp amchur / dry mango powder
½ tsp garam masala powder
¼ tsp turmeric / Haldi
salt to taste
1 cup suji and 1/2 cup sesame seeds to coat
8 cashews, halved

INSTRUCTIONS:

  1. firstly, blanch palak leaves by boiling palak for 2 minutes in water.squeeze off excess water and keep aside.picsart_1486556053708picsart_1486561911680
  2. In a large kadhai heat oil and add green chili.also, add capsicum and saute till the moisture disappears.
  3. further, add beans and peas saute well, transfer to the blender and allow to cool completely.picsart_1486908608716
  4. blend to the coarse paste along with blanched palak, transfer the blended paste into a large mixing bowl.picsart_1486908926076
  5. also add grated potato, paneer and coriander leaves.
  6. further, add corn flour and suji. add in the spices and salt. mix well.picsart_1486909055253
  7. grease hands with oil and make small patties, sesame and with the help of cookie cutter make heart shapes.
  8. cover the patties with sesame seeds mixture and garnish with cashew.
  9. Grease your palms with oil and divide mixture into 8 equal portions.Take each portion and give it a heart shape using a cookie cutter.press it gently between your palm to flatten.picsart_1486909127456
  10. Heat 1-2 tablespoon oil in a nonstick pan or non-stick Tawa over medium flame. when the pan is medium hot, put tikis at a time and shallow fry until bottm surface turns light brown, it will take around 3-4 minute .

  12. Transfer each kabab to a plate, serve hara bhara kabab with tomato ketchup or green chutney.

NOTES:

  • The spinach has to be blanched and has to be squeezed to remove the water content otherwise kebab may not hold its shape while deep frying.
  • Secondly, I have added corn flour and Suji  to the vegetable dough. both are important as they helps to absorb the moisture and binds it properly.
  • Tikkis are shallow fried to use less oil but you can deep fry them to better crispness and taste .For deep frying , keep oil on medium flame and deep fry until golden brown.If you deep fry tikkis over low flame, they will seprate in oil and if you deep fry them over high flame, they will turn brown immediately.
  • In addition to fresh vegetables, I have even added crumbled paneer. this helps to bind all the vegetables and obviously adds a great taste to kebab.

Roti Cutlet Recipe ( Leftover Chapati Cutlets)

The love for food of my family motivated me and challenged me to become a cook. I always wanted to keep their love for food going on and hence it was a daunting task to try and create something different and unique and yet healthy food on a day to day basis.

My daughters always deny to eat roti or Dal chawal after coming from school. Everytime I search healthy recipes for them .This time I am more happy with this recipe because it contains chapatis.Even they can’t recognize it contains roti.
We played a game for guessing main  ingredient and nobody could guess it.
Everyone loved this recipe .

Again this is one of my handy recipe after Leftover Roti (Chappati) Laddu to finish leftover chapati at home as they are yummy and healthy too. For this recipe I have chosen veggies of my choice, you can alter it according to your choice.You can serve this Cutlets in breakfast too.

This Cutlet recipe is adapted from shipy agrawal. I have been following her site for long time and a great fan of her recipes. If you find time, go through her blog to see some healthy recipes.
Prep time 20 mins Cook time 15 mins
Total time 35 mins

INGREDIENTS:
Roti, chapati : 3-4,
Grated Carrot: ¼ cup,
Fine chopped onions: ¼ cup,
Lemon Juice: 1-2 tsp,
Boiled mashed potatoes: ⅔ cup,
Semolina/ rawa/ sooji: 2tbsp+ 1tbsp for coating,
Sesame seeds 2tsp for coating .
Coriander leaves: 2 tbsp,
Fine chopped green chilly: 2,
Salt,
Red chilly powder: ½ tsp,
Oil

INSTRUCTIONS:

  1. Break roti, chapati or tortilla in small pieces.picsart_1476757492967
  2. Grind them to a grainy mixture and transfer it to a mixing bowl.
  3. Add boiled mashed potatoes, onions, carrots, lemon juice, sooji or rawa, coriander leaves, salt green chilies with ground roti.picsart_1476761286985
  4. Mix everything together and knead it like dough and let it rest for 10 minutes.
  5. After 10 minutes rub little oil in your palm and make patties.picsart_1476761446265
  6. You can make any shape patties you like.
  7. Roll the patties in semolina or rawa with sesame seeds.
  8. Heat the pan on medium heat and add oil on it.

  10. Cook them and flip them over couple of times till they become brown and crispy from both the sides.
  11. roti cutlets are ready serve them with your favorite dip.

Hung curd dip
1/2 cup hung curd
1/2 tsp chilliflakes
1 tsp tomato sauce
1/2 tsp crushed garlic
salt to taste
To make the Dip, blend together hung yogurt, salt and garlic and tomato sauce and red chilliflakes and transfer into a small bowl.

NOTES:

  •  You can use leftover roti, tortilla or parathas to make chapati cutlets.
  •  While grinding roti do not make thin powder we need grainy mixture.
  • Chop veggies very fine so that they get easily bind up with other ingredients.
  •  Do not turn roti cutlets immediately after putting them on pan wait for few minutes then turn them over.
  •  If your chapatis are already salted do not add too much of salt.

Palak Paneer Balls

Palak Paneer Balls

Ya you got it right. This power packed snack comprises spinach & paneer (cottage cheese).

Paneer has a bland flavour and thus blends well with any ingredient. Kids love it very much. Here I am sharing recipe of this yummy snack with you.

I didn’t want to use potato for starters, so i got this idea and my kids love it like anything.

INGREDIENTS:
1cup chopped spinach (palak)
1 cup crumbled paneer (cottage cheese)
4tbsp cornflour
salt to taste
2 processed cheese cubes , each cut into 6 pieces(optional)
1 tsp green chilli paste or 1tsp chilli flex
Seasme seeds for rolling
oil for deep-frying

For Serving:
tomato ketchup / sweet chilli sauce

INSTRUCTIONS:

  1. Combine the paneer, spinach, salt, green chilli paste and cornflour in a bowl and mix well.
  2. Divide the mixture into equal portions and shape each portion into a small round.
  3. Press a little in the centre of each round to make a depression, place a piece of cheese cube in it and again shape them into a round ball.(this step is optional)
  4. Roll the balls in the seasme seeds till they are evenly coated from all the sides.
  5. Heat the oil in a kadhai and deep-fry 3 to 4 balls at a time till they turn golden brown in colour from all the sides.
  6. Drain on absorbent paper and serve hot with tomato ketchup or sweet chilli sauce.

Handy tip:
Insert a toothpick or a breadstick to make the cheese balls look more appealing to your little ones.

Chilli Paneer

Chilli Paneer

All time favorite dish..easy to make at home…A complete party pleaser..
I Prepared this dish for shahi dinner.

INGREDIENTS:

Paneer – 200 gms cut into cubes
All purpose flour – 1/2 cup
Rice flour – 1 tbsp
Corn flour – 11/2 to 2 tbsp
Salt to taste
Water
Oil for frying
Soy sauce – 1 tbsp
Tomato ketchup – 2 tbsp
Bell peppers Red, Green & yellow – 1
Spring onions – 1 bunch chopped
A few cloves of Garlic chopped
A piece of Ginger chopped
Red chilli – 2 cut up diagonally
A few Coriander leaves chopped
Salt to taste
Oil – 1 tbsp

INSTRUCTIONS:

  1. Prepare a thick batter out of All purpose flour, Rice flour, Corn flour, salt & water. Dip each paneer cube in a batter and deep fry in hot oil and keep aside.
  2. In a wide pan, add oil, garlic, ginger, red chilli, Bell peppers, spring onion & saute it for a few minutes. And then add salt, pepper, soy sauce, tomato ketchup & saute it.
  3. Once you made a sauce add fried paneer & mix it. Make sure sauce is coated well with the paneer.
  4. Finally add spring onions & coriander leaves. Turn off the flame & serve it.

Masala Papad

Today I prepared shahi dinner .First course served in hotels is masala papad -My family’s all time favorite .

INGREDIENTS:

6 Papad
1/2 cup Onion (finely chopped)
3/4 cup Tomato (finely chopped)
1/2 cup Coriander leaves/Cilantro (finely chopped)
1 tsp Red chilly Powder
1 tsp Chat Masala Powder
1 tsp Mango/Aamchur Powder or 1 tsp Lemon juice
Salt to taste

INSTRUCTIONS:

  1. Roast Papad on medium flame or microwave it for 40 seconds or fry it . I love fried papad .
  2. Mix all the ingredients except Papad and make a mixture.
  3. Assemble Papad on serving plate and sprinkle some red chilly powder on it.
  4. Put the prepared mixture evenly on it and serve immediately.
  5. You can also serve the masala separately .
