EGGLESS WHOLE WHEAT JAGGERY CAKE

This is the perfect Tea time cake!
As it is made without maida or refined sugar, you can enjoy it any time without any guilt. Super moist and healthy cake.

I  used Naario http://naario.com jaggery powder  in this cake .This masla jaggery is too good and flavourful .pls check their website for more and use my code ASTHA12 for Discounts .

INGREDIENTS:

  • Dry Ingredients :
  • Whole Wheat Flour – 1 Cup
  • Baking Powder – 1 Tsp
  • Baking Soda – 1/2 Tsp Salt – A Pinch
  • Cinnamon/Cardamom Powder – 1/2 Tsp Naario tea masala Jaggery or Powdered Sugar – 3/4 Cup
  • Wet Ingredients:
  • Oil – 1/4 Cup
  • Curd 1/4 Cup
  • Milk-1/2 Cup

INSTRUCTIONS:

  1. In a large bowl, sieve(twice or thrice) all the dry ingredients.
  2. In another bowl, mix well all the wet ingredients. Transfer the wet mixture to the dry ingredients and whisk it until combined.
  3. Add 1-2 Tsp of milk to the batter if it’s thick.  Butter the cake tin and sprinkle flour, and tap to remove excess and make it ready.
  4. Pour the cake batter into the tin. Spread and make it even.
  5.  Sprinkle chopped Dry fruits over the top. Preheat cooker or oven at 180 degrees for 10 mins.
  6. Place the cake tin and Bake in a preheated cooker/ oven for 35-40 minutes.
  7. Insert the toothpick in the center of the cake to test, if the toothpick comes out clean then the cake is ready

GUR TIL MAKHANE

INGREDIENTS:

  • 2 cups Phool Makhane (puffed lotus seed or foxnut) (dried)
  • ¾ cup Jaggery
  • 2 tbsp til( seasme seeds )
  • 1 tablespoon ghee
  • 1tbs water

INSTRUCTIONS:

  1. Roast 2 tbsp til till it crackles.
  2. Heat ghee  in a pan,Add makhane/lotus seeds to the pan.
  3. Cook them over medium heat until they become light brown in color and brittle, stirring occasionally. This may take 7-8 minutes.
  4. PRO TIP Make sure foxnuts/ makhane are crispy and brittle before you move on to the next step. If makhane is not brittle they will turn soggy as soon as we add jaggery to it.
  5. Meanwhile, combine jaggery with 3 tablespoons of water. Boil until it is reduced to half its quantity.
  6. When the gur syrup becomes thick (almost like 2 string consistency), it will coat the back of your spoon.
  7. Another way to check the consistency – take a bowl of tap water. Pour a few drops of jaggery in water. If the jaggery solidifies and settles at the bottom of the bowl, the syrup is ready.
  8. Pour jaggery over foxnuts/ makhane and take it of the flame.
  9. Switch off the flame and add makhana along with til, mix well. Let it cool a bit and then tear them apart. Store in an air tight container.

EGGLESS ATTA BISCUITS WITH CHAI MASALA JAGGERY/ WHOLE WHEAT CHAI MASALA JAGGERY COOKIES /ATTA GUD BISCUIT 

Eggless atta biscuits with jaggery are the simplest of all biscuits recipes made with whole wheat flour and gud.
I used Naario (India’s 1st women-led food brand that offers natural and organic products, all pioneered by homemakers.) Chai masala jaggery  in this Cookies .This chai masla flavour jaggery is too good and flavourful .pls check their website for more …https://naario.com/

INGREDIENTS:

  • 1 cup whole wheat flour/atta
     
  •  1/2 cup jaggery/gud
     
  •  1/4 cup butter unsalted or desi ghee
  • 1/2 tsp baking powder
     
  • 1/4 tsp baking soda
     
  • Salt a pinch
     
  • 2 tbsp milk more or less
     
  • Pistachio and almonds for decoration 

INSTRUCTIONS:

  1. Add butter and jaggery in a bowl. Grate jaggery before adding or it should be so soft to get mixed immediately. Alternatively can use jaggery powder.I used naario brand chaimasala jaggery powder.
  2. Whisk them with electric beater till the butter turns creamy. You can use wire whisk too but that is time taking process.
  3. Put a sieve on bowl and add flour, baking soda, baking powder and salt. Remember, if your butter is salted, then skip extra salt here.
  4. Sift the ingredients into the bowl.
  5. Using a spatula mix everything well.
  6. When everything is incorporated, bring all of them together with your hands and start making a dough without kneading.
  7. Add milk to make the dough. The quantity of milk depends on the fact whether your dough is forming or not. We needed to  just 2 tablespoons of milk.
  8. The dough should be of soft consistency.
  9. Make heart shape using cookie cutter  of the mixture .
  10. Place the baking tray in refrigerator (not in freezer) for minutes.
  11. When you are 10 minutes away from baking, switch on the oven @150°C for 10 minutes for preheating.
  12. Put the tray in middle rack of oven with both the rods on @150°C for 25 to 30 minutes or till the biscuits are baked properly.
  13. Once done, bring the cookies out and let them turn completely cool.
  14. Eggless atta gud biscuits are ready. Enjoy.

POMEGRANATE ORANGE AMLAJUICE / HEALTHY FRUIT JUICE /VITAMIN C JUICE

Pomegranate, Orange and Amla are three different fruits that are so health benefiting in different ways. But they have something in common that benefits us in many ways, all the three fruits that I have used here are rich in antioxidants and therefore is the most healthiest trio ever.

Vitamin C is a very good and powerful antioxidant found in these three fruits. And I feel that I should better name the drink as Vitamin C drink.

Pomegranates are said to be good for heart and also fights cancer due to the high levels of antioxidants present in it. When the trio combines it gives a very refreshing and delectable drink. Amla or the Indian gooseberry gives sour and tart-ic taste, while pomegranates offers sweetness and so does oranges but they additionally give a citrus touch to the drink.

The trio tastes great and benefits your health in many ways. You can keep on listing the health benefits of these fruits, they are so very beneficial in many many ways.
Then imagine the goodness of all the three fruits in a single serving. You can gulp all the nutrition, minerals and vitamins from the same glass.

Serve this healthy and refreshing drink for your loved ones and watch them enjoy it.

INGREDIENTS:

  • Pomegranate kernels – from 1 pomegranate 
  • orange -1 peeled
  • Amla/ indian gooseberry – 1 (chopped, discard seed)
  • sugar- as per taste (optional)

INSTRUCTIONS:

  1. Add orange and amla pieces to a blender and blend well.
  2. Then add the pomegranate kernels, 1 cup of water and blend again just for a few seconds. If you grind for a long time the pomegranate seeds will break and become coarse.
  3. Strain the juice using a strainer and discard the pulp.
    Serve!!
  4. Refreshing Vitamin C rich drink is now ready!! Serve as a party drink or as a refresher!!

NOTES:

  • Those who catch cold easily can use warm water instead of chilled water and extract juice. I catch cold easily when i just take a sip of any fruit juice, but after trying this way I feel I haven’t got cold.
  • Add sugar or honey according to taste. I haven’t added any sweetening agents as the orange and pomegranate was sweet enough. but you can add some if you wish.
  • My pomegranate kernels were pale pink in color, so color changes may apply if you use dark red colored pomegranate kernels.

CHOCOLATE WALNUT ALMOND CUPS

Gluten Free and No Bake .
If you are looking for a simple yet healthy and delicious sweet fix this is it . You are going to love these chocolate cups .

INGREDIENTS:

  • 1 cup soft pitted dates
  • 1 /2 cup walnuts
  • 1/2 cup almonds
  • 1/3 cup gluten free oats
  • 1 tsp honey

INSTRUCTIONS:

  1. Blend all these ingredients in a food processor.
  2. Scoop and press into a mini cupcakes mold.
  3. Set in the refrigerator.
  4. Melt 1/2 cup dark chocolate .
  5. Pour into each cup and set back into the freezer for 15 min.

KALA CHANA & PALAK KABAB

Looking for the perfect bite-sized guilt free snacks to celebrate your holiday party?Here is one such recipe you will love to try.
A very healthy and delicious  kababs made with kala Chana ( Bengal gram or Black chick peas) plus Spinach and paneer .
it is a complete blend of protein and fiber and hence guilt free .

INGREDIENTS:

  • 2 cups boiled and drained Kala Chana ( Black Gram)
  • 2 cups packed Spinach leaves
  • 1/4 cup grated low fat paneer ( indian cottage cheese)
  • 1 small onion chopped
  • 2 cloves of garlic
  • 1 inch ginger
  • 1-2 green chilli
  • 2 tbsp of besan ( gram flour)
  • salt to taste
  • red chili powder- 1/2 tsp
  • 1/2 tsp cumin powder
  • 1/2 tsp lime juice
  • 1/2 tsp Garam masala powder
  • 4 tsp oil for cooking them.

INSTRUCTIONS:

  1. Wash and roughly chop the spinach leaves. Boil them in water for 5 minutes and the drain them using strainer. Place the strainer under running water and in this way Spinach will get blanched. it will reduce to near about 1/4 cup. Also don’t throw the water. you can use it in kneading dough, or in soup or in daal too.
  2. In a food processor put kala Chana, ginger,garlic,green chili and pulse until combined but still coarse.( you don’t have to make a paste.)
  3. Add flour, onions , lime juice all the spices and mix well. Squeeze out the spinach and add as well. Mix everything well. Now roll this mixture into balls. If you feel that the mixture is too sticky add some more flour and grease you hand a little bit.
  4. Roll dough into lemon sized balls and gently flatten them to make a patty.
  5. Place patties on a non stick pan. Brush each patty with little oil , flip them over and brush on other side
  6. cook on both sides for 15 minutes, then flip them over and roast for another 15 minutes, until golden crisp on both sides.
  7. Serve it to your family and let them enjoy this delightful healthy meal loaded with taste and nutrition.
